Strawberry Feta Cheese Salad

Ingredients

• 75g pecan nuts, toasted
• 220g salad leaves
• 200g Irish strawberries
• 75g cubes of feta cheese
• ½ red onion, sliced

Dressing

• 100ml vegetable oil
• 1 ½ tablespoons balsamic vinegar
• 1 tablespoon brown sugar
• ½ tablespoon honey
• 1 clove garlic, crushed
• ½ teaspoon Dijon mustard
• Salt & pepper to taste

Method

• Add all dressing ingredients to a small jar, close the jar with the lid, and shake to mix everything. Set aside.
• Add the salad ingredients to a large bowl, pour over the dressing, mix, and serve.
• Alternatively, you can serve the salad in a bowl and let your guests drizzle over their own dressing.
