Potato Chorizo Salad

Salad
1kg baby potatoes
40ml olive oil
6 cloves garlic, crushed
Salt & Pepper
200g chorizo
100g rocket salad
 


Dressing
3 tbsp cider vinegar
1 tbsp olive oil
2 tsp wholegrain mustard
2 tsp honey
1 scallion, chopped

 

 


Method
Preheat your oven to 200C/180C fan.
Half the raw baby potatoes and place on a baking tray with the crushed garlic.
Drizzle with oil and season.
Place in the oven and cook for 15 minutes.
Once this time is reached, add the chopped chorizo to the tray and return to the oven for a further 10 minutes or until the potatoes are cooked fully.
Remove and set aside to cool slightly.
For the dressing, place all the ingredients into a bowl and whisk.
Drizzle this over the warm potato, chorizo and rocket and serve.
