
Makes 2 large or 4 small glasses
Ingredients
250ml prosecco
60ml elderflower cordial
60g caster sugar
30g leaf gelatine
Mixed Summer berries
Method
Soak the leaf gelatine in a container of ice cold water for 5 minutes or until soft.
In a pot heat the sugar, elderflower cordial and 250ml of water until combined, remove from the heat .
Squeeze the excess water from the gelatine and add to the hot liquid above and stir until melted.
Once combined, strain into a jug and allow to cool.
When the liquid is cool add the prosecco and stir.
Half fill 2 large glasses and top with some Summer berries and place in the fridge to set.
Once set, divide the remaining liquid between the glasses and top with some more berries and return to the fridge to set.
Serve cold.
Top Tip: These can be made using fruit juice if you want to omit the alcohol
