
Makes 18-20
Vanilla biscuit
125g butter
125g caster sugar
1 eggs
250g plain flour
Dash of vanilla extract
Decoration
300g Icing sugar
few drops lemon juice
food colouring
20 large white marshmallows
dark chocolate (melted)
Method
To make the biscuit, cream the butter & sugar together until pale in colour.
Add the egg and vanilla essence, mix.
Finally add the flour and mix.
Once combined wrap and chill for 1 hour.
Once rested, roll the dough out on a floured surface and cut 10 round discs.
Place these on a lined baking tray, egg wash and sprinkle with
caster sugar and bake at 165C for 10 minutes or until golden brown.
While baking, place the icing sugar in a bowl and add some lemon juice until a smooth thick paste
is reached. You can divide this up and colour some of this with food colouring to create the orange
nose and green buttons on the snowman.
Melt the chocolate and place in a small piping bag and pipe the eyes, eyebrows and mouth on the
marshmallow, also pipe on some orange icing for the nose and place in the fridge to set.
Once the biscuits are cooked and cooled, spoon on some of the lemon icing on the cookie, place
the marshmallow head on top of this and taking your melted chocolate again, pipe on the hands
and use the green icing for the buttons.
Allow to dry before serving.
If you do not fancy making the different coloured icings you are able to buy different coloured
edible markers in cake shops and these will also work perfectly fine.
