Goats cheese & red onion marmalade soda bread

Goats cheese and herb soda bread 

Serves 8-10


450g Odlums plain/cream flour

1 teaspoon bread soda

1/2 teaspoon salt

350ml buttermilk

1 teaspoon chopped thyme

1 spring onion

100g Morans Jam red onion marmalade

100g St Tola’s goats cheese 

Rocket leaves to garnish


Pre heat your oven to 200C.

In a mixing bowl, add the flour, bread soda, salt and mix.

Add the buttermilk and mix until you form a dough.

To this add the spring onion, thyme, Morans red onion marmalade and St Tola’s goats cheese and continue to mix.

Place the dough on a lined baking sheet, brush with egg wash and bake for 35-40 minutes until golden brown.

Remove and allow to cool before serving, serve with some beautiful peppery rocket leaves
