Fruit tart with vanilla pastry cream

Serves 6


Pastry Cream

  • 2 egg yolks

  • 35g caster sugar

  • 10g plain flour

  • 5g cornflour

  • 175ml milk

  • 1 teaspoon vanilla essence

1 sheet puff pastry

For the pastry cream, whisk the egg yolks and sugar until pale.

In a saucepan, heat the milk and vanilla and pour over the egg yolk and sugar.

Whisk and strain back into the pot and cook over a gentle heat until the mixture thickens up.

Once thick, put in a bowl with cling-film directly on top and chill until needed.

Preheat your oven to 190C

Cut the rectangle of pastry in half leaving you with two 14”x5” pieces.

With a knife lightly score a border around the edge of one of them.

Egg wash the top of one of the sheets and place the scored sheet on top. Egg wash this also and bake in a preheated oven for 15-20 minutes or until golden brown.

Once baked, set aside to cool.

With a spoon, beat the pastry cream until smooth and chop your fruit.

Push the center of the tart down and spoon the cream into the center and finally layer on the fruit and serve!
