
Buttermilk soda bread, Irish trout & horseradish

Ingredients
Soda bread
225g plain flour
1/2 tsp salt
1/2 tsp bead soda
185ml buttermilk
16 slices Goatsbridge smoked trout
4 tbsp creme fraiche
1 tsp chopped fresh dill
1/4 tsp horseradish puree
fresh dill to garnish
Method
Preheat the oven to 200C/ 180C fan/ Gas 6/ 400F
For the soda bread, In a mixing bowl sieve in the flour, salt and bread soda.
Make a well in the centre and add the buttermilk.
Mix until combined and shape into a round loaf.
Dust with flour and using the back of a knife mark a cross on top.
Place in the centre of the preheated oven and bake for 35-40 minutes.
Remove and allow to cool.
For the horseradish cream, mix the creme fraiche, chopped dill and horseradish and keep cold until needed.
To assemble, cut the loaf into 8 slices and each one of these slices in half.
Spoon on some horseradish cream and top with a slice of delicious Goatsbridge smoked trout.
Dress with some fresh dill and enjoy.
