6 Butlers Organic eggs
1 ripe avocado
1 lime juice
salt & pepper
1 tbsp chopped coriander
1/4 green chilli (add as much heat as you want here)
Chopped tomato or pomegranate
Place the Butlers organic eggs in a saucepan and cover with cold water.
Bring the water to a rapid boil, turn down to a simmer and set your timer for 7-8 minutes.
Once this time has elapsed, cool the eggs under running cold water straight away. This will prevent the dark circle forming around the yolk.
Once cool, de-shell and cut in half lengthways.
Remove the yolks and place them in a food processor with the avocado, chilli, lime juice, salt & pepper and coriander and blitz until smooth.
Place the spicy guacamole into a piping bag fitted with a star nozzle and pipe this mix where the yolk used to be and sprinkle on some chopped tomato or pomegranate for colour. Serve as delicious pre dinner nibbles.
