Method
In a medium sized pot, add the butter, golden syrup, brown sugar and stir over a gentle
heat until everything is melted and combined. Set aside to cool to room temperature.
In a mixing bowl, sieve in the flour, soda and ground ginger.
Add the wet ingredients to the dry and mix with a wooden spoon until a dough is formed,
add the water if it’s a little dry.
Preheat your oven to 200C/180C fan/400F/Gas 6.
On a floured surface, roll out the gingerbread to about 1/2cm in thickness and using a 8cm
round cutter, cut out eight circles. You will need to reroll the trimmings to get all eight.
Place on a lined baking tray and into the preheated oven for 7-8 minutes or until golden
brown.
Set aside to cool.
To decorate, for the sugar icing, add a few drops of water to the icing sugar and mix until
you have a firm but pipeable paste, spread this over the top of the cookies, add festive
sprinkles and use melted chocolate to pipe your dinner guests name on top.
These can be made up to two days in advance and stored in an airtight container to save
time.
