 In a medium sized pot, add the butter, golden syrup, brown sugar and stir over a gentle
heat until everything is melted and combined. Set aside to cool to room temperature.
 In a mixing bowl, sieve in the flour, soda and ground ginger.
 Add the wet ingredients to the dry and mix with a wooden spoon until a dough is formed,
add the water if it’s a little dry.
 Preheat your oven to 200C/180C fan/400F/Gas 6.
 On a floured surface, roll out the gingerbread to about 1/2cm in thickness and using a 8cm
round cutter, cut out eight circles. You will need to reroll the trimmings to get all eight.
 Place on a lined baking tray and into the preheated oven for 7-8 minutes or until golden
brown.
 Set aside to cool.
 To decorate, for the sugar icing, add a few drops of water to the icing sugar and mix until
you have a firm but pipeable paste, spread this over the top of the cookies, add festive
sprinkles and use melted chocolate to pipe your dinner guests name on top.
 These can be made up to two days in advance and stored in an airtight container to save
time.
