
This tasty slice will soon be a family favorite. It’s the one pot wonder of the baking world!
Rhubarb white chocolate crumble slice
Makes 8-10
Ingredients
125g butter
125g caster sugar
2 medium eggs
1 teaspoon vanilla extract
130g plain flour
1 teaspoon baking powder
1/2 teaspoon bread soda
50g sour cream
50g white chocolate
250g cooked rhubarb
Crumble mix
40g plain flour
40g porridge oats
15g brown sugar
25g butter
Method
Line a 20cm x 20cm baking tin with parchment paper and set aside.
In a mixing bowl, cream the butter and sugar together until smooth.
Add one egg at a time and then the vanilla essence.
Add in the sieved flour, baking powder and bread soda and mix.
Finally fold in the sour cream and white chocolate and spoon into the lined tin.
Top with the cooked cooled stewed rhubarb and spread over the top.
For the crumble mix, simply mix all ingredients together until it resembles breadcrumbs.
Sprinkle this over the top of the rhubarb and place in a preheated oven at 165C for 40-50 minutes or until a knife inserted into the centre comes out clean.
Allow to cool and enjoy!
