500g caster sugar
1 teaspoon vanilla essence
1kg plain flour
Food colouring paste: red- orange-yellow-green-blue-violet
In a mixing bowl, cream butter and sugar until light and pale in colour.
Gradually add the eggs and vanilla, combine.
Finally add the flour and mix.
Divide this dough into 6 pieces, wrap and chill for 15 minutes.
Once chilled, add some food colouring paste to each piece and knead until mixed.
In this order violet, blue, green, yellow, orange, and red, roll a rectangle 1cm thick, brush the top of this lightly with water and place the next colour dough on top.
Continue until all layers are complete and chill for a minimum of 2 hours.
Once chilled, slice the layered rectangle into 10 slices and each of these into two leaving you with 20 cookies.
Place on a lined baking tray and put in a preheated oven at 150C for 15-20 minutes.
When cooked, remove and chill
