No Bake Chocolate candied orange tartServes 8
450g digestive biscuit crumb
100g melted Irish butter
600g dark 54% chocolate
450ml single cream
1/2 orange zest
1 large orange
400g caster sugar
Blitz the biscuits until finely ground, add the melted butter and mix.
Press this mix on the base and up the sides of an 9” round loose bottom tart ring.
Chill for 30 minutes.
For the filling, place the chocolate chips and orange zest in a medium bowl and set aside.
Heat the cream and butter until combined and hot, pour this over the chocolate and leave for one minute.
Using a spatula, stir the mix until combined, if there is some chocolate which did not melt, place the bowl into the micro wave for a few seconds to help melt the remaining chocolate.
Once smooth, pour this mix into the cooled tart shell and smooth out with a spoon and return to the fridge for a few hours.
For the candied orange, using a veg peeler, peel the orange rind and chop into slices.
Bring the water and sugar to the boil and add the the zest and boil for 5 minutes.
Take one out and taste, if soft and not bitter, there ready.
Drain and pat dry, sprinkle on caster sugar to coat and set aside.
To serve, dust with cocoa powder and top with the orange peel and flower petals.
Perfect served with a dollop of semi whipped cream. Enjoy!
