1 roll of ready rolled puff pastry
200g cream cheese
1/2 orange zest
Dash of vanilla extract
1 tablespoon sugar
Selection of mixed berries
In a bowl, mix the cream cheese, orange zest, vanilla and sugar, set aside.
Unroll the puff pastry and place on a tray lined with parchment paper.
Spread the cream cheese filling down the middle leaving a boarder all around the edge.
Place the seasonal berries on top of the cream cheese.
Cut slits in the pastry one inch apart lengthwise down each side of the filling.
Crisscross the strips over the filling.
Once completed, egg-wash and sprinkle with pearl sugar or granulated sugar and place in a preheated oven at 180C and bake for 35 minutes or until golden brown.
Remove and allow to cool slightly, serve with a side of semi whipped cream.
