3 sheets of filo pastry
100g melted butter
300g Gem Christmas cake fruit mix
1 grated apple
20g Gem chopped apricots
15h Gem flaked almonds
100g Gem brown sugar
1 tsp mixed spice
1/2 tsp ground cinnamon
For the parcel filling, mix all the ingredients together and allow it to sit overnight.
Preheat your oven to 200C/180C fan/ Gas 6/ 400F
Cut each filo sheet into 8 x 4.5” squares, this will give you 24 squares in total.
Using the melted butter, brush a square of filo and place another filo square on top, brush this with butter too.
Place these buttered squares into a muffin tin cup.
Repeat the process until you have 12 filled.
Spoon in some of the spiced fruit mix and pinch the top of the pastry to create a small parcel.
Place in the preheated oven and bake for 10-12 minutes or until golden brown all over.
Remove from the tins and cool on a wire rack.
For the custard, simply blend the Gem custard powder and sugar.
Mix with the milk and in a pot over a gentle heat, stir until it begins to thicken.
Serve the parcels warm with custard on the side.
