2 baked potatoes
2 tablespoons butter
150g minced beef
1 medium onion
1 tablespoon tomato puree
Spike the potatoes with a fork and place in the oven at 180C for 60 minutes,
In a frying pan, melt the butter and fry the onions for 2 minutes and add the mince. Cook for a further 5 minutes unti the mince is cooked. Add the gravy, puree and season. Cook gently for a further 20 minutes until sauce is thickened.
To assemble, cut the jacket potato in half lengthways and scoop the flesh into a small bowl, leaving the skin intact. Mash the potato with the remaining butter and season well. Divide the mince between the potato skins, then cover with the mash. Transfer the potatoes to a baking dish, sprinkle with cheese, then bake for 15-20 mins until golden.
