
Coffee mocha cake
Serves 8
Ingredients
170g butter (room temperature)
170g caster sugar
3 medium eggs
2 tablespoons cocoa powder
170g self raising flour
1 teaspoon baking powder
4 tablespoons instant coffee
2 tablespoons hot water
50g chopped walnuts
Topping
250g butter
100g icing sugar
1 tablespoon diluted coffee
Dark chocolate shavings
Method
In a mixing bowl, add all the ingredients keeping back the nuts and mix until a smooth batter is reached.
Fold in the chopped nuts and spoon this batter into a lined 2lb loaf tin.
Place in a preheated oven set at 160C and bake for 50 minutes or until a skewer inserted into the center comes out clean.
Allow to rest in the tin for 5 minutes, then remove from the tin and allow to cool on a wire rack.
To make the frosting, cream all the ingredients together and once the cake is cold, spread over the top and cover with chocolate shavings.
