
Delicious chewy chocolate cookies sandwiched with a peanut buttercream… Heaven!
Chocolate peanut butter cookie sandwich
Makes 12 cookies / 6 sandwiches
Cookies
165g plain flour
30g cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon bread soda
55g butter
50g caster sugar
35g brown sugar
1 egg
45g golden syrup
30ml milk
1/2 teaspoon vanilla essence
130g chocolate peanut butter cups
40g salted peanuts
Peanut buttercream
200g butter
200g icing sugar
100g smooth peanut butter
Method
In a mixing bowl beat the butter and sugar until smooth.
Whisk together the egg, golden syrup, milk and vanilla and slowly add.
When combined add the flour, cocoa, baking powder and bread soda and mix until a dough is formed.
Add in the chocolate peanut butter cups and salted peanuts and mix gently.
Divide the dough into 12 equal balls and place on two lined trays, flatten slightly and allow some room for them to spread.
Place in a preheated oven at 160C for 10-14 minutes.
Once baked, remove and place on a wire rack to cool.
For the buttercream, simply beat the butter and sugar until light and fluffy.
Add the peanut butter to this and mix until combined and smooth.
Place the buttercream into a piping bag and pipe on the base of one cookie and sandwich with the other.

Can I use just peanut butter, instead of the peanut butter cups? They look delicious…. Would make a lovely stacked cake too! Weekend baking sorted!
