Cheese & thyme soda bread muffins
450g plain flour
1 1/2 teaspoons bread soda
1/2 teaspoon salt
1 tablespoon chopped thyme
100g grated cheddar
1 spring onion
In a mixing bowl, mix together the flour, bread soda, salt, thyme and spring onion.
Add the butter milk and cheese and mix to form a dough.
Turn out onto a floured surface and divide into 8 equal pieces.
Roll and put into the cupcake tin.
Eggwash and bake at 180C for 25 minutes until golden brown
Remove from the tins and allow to cool.
