Baked flatcap mushrooms with goats cheese & herb stuffing Serves 6 Ingredients 6 flatcap mushrooms 150g soft goats cheese 200g red onion marmalade 1 onion 200g butter 250g breadcrumbs 1 tablspoon chopped sage seasoning Method For the stuffing, simply dice the onion and cook in a pot with the butter, once the onions are soft add the sage and breadcrumbs, season and set to one side. Remove the stem and the outer layer of skin off the mushroom and place in a roasting tray. Spoon the red onion marmalade onto the mushroom and on top of this place a slice of the goats cheese. Top this with the cooled suffing mix and bake in a prehated oven at 165C for 35 minutes. Remove from the oven and allow to rest for 5 minutes before serving with some dressed salad eaves.
